Chocolate Enrobing Lines

An enrobing line coats finished centres — biscuits, wafers, bars, pralines, fruit, and nuts — by passing them under a falling curtain of tempered chocolate on a wire belt, then setting the coat in a cooling tunnel. It is the machine that turns a plain centre into a chocolate-covered product at production speed. We build enrobing lines to order at our Casablanca facility, sizing the belt width, tempered-chocolate feed, and cooling length to the product you are running.

Below we explain what enrobing does, when a producer needs it instead of one-shot moulding, and the factors that determine how a line is sized. How we build to your product

Enrobing is a coating process. A centre that has already been formed — a biscuit, a wafer, a bar, a praline shell, a piece of fruit or a whole nut — is carried on a wire mesh belt and passed under a continuous curtain of tempered chocolate. The curtain falls from a reservoir above the belt and covers the top and sides of each piece; chocolate that reaches the wire belt coats the base as the piece passes through. What comes out the far end is a fully coated centre ready to set. The centre defines the product; the enrober gives it its chocolate shell.

Three components do the finishing work after the curtain. A blower, positioned just past the coating point, removes excess chocolate and controls coat thickness — turned up, it thins the coat and clears webbing between closely spaced pieces; turned down, it leaves a heavier shell. A tail detailer manages the underside, keeping the base clean and, where wanted, laying down the fine tail or foot that hand-dipped chocolates carry. From there the belt runs the coated pieces into a cooling tunnel, where controlled airflow and temperature set the chocolate to a firm, glossy finish before the product reaches sorting or packaging.

The chocolate feeding the curtain must be tempered. Enrobing only produces a stable, glossy, well-contracting shell if the chocolate arriving at the curtain is in temper, and the line is built to hold that condition across the coating zone. The feed rate to the curtain is one of the variables we set when configuring a line, because it has to match belt speed and product spacing — too little and pieces run out uncoated, too much and the curtain floods the belt. Feed, belt speed, and blower setting are tuned together to the product, not set once and forgotten.

A producer needs an enrobing line when the job is to coat existing centres at volume. If you are making chocolate-covered biscuits, wafer fingers, coated bars, enrobed pralines, dragée-style fruit and nut, or any product where the inside is made first and the chocolate goes on the outside, enrobing is the process that scales that step past hand-dipping. It is a continuous, in-line operation: centres go in one end, coated and cooled product comes out the other, and the line speed is set by your throughput target.

Enrobing and one-shot moulding solve different jobs, and we will help you tell them apart before you buy the wrong machine. One-shot moulding forms the product itself — it deposits shell and filling together into moulds to create solid bars, tablets, pralines, and filled shapes from liquid chocolate. Enrobing does not form anything; it coats a centre that already exists. If your product is a moulded tablet or a filled praline shell, that is moulding work; if your product is a biscuit or a bar that needs a chocolate coat, that is enrobing work. Some producers run both — a moulded or extruded centre, then enrobed — and we will size each line to the other.

Belt width is the first sizing factor. A wider belt carries more pieces across each pass and lifts throughput, but it also raises the tempered-chocolate feed the curtain has to sustain and widens the cooling tunnel that follows. We set belt width to the product footprint and the pieces-per-minute or kilograms-per-hour target you are working toward, so the whole line — curtain, belt, blower, tunnel — is dimensioned as one system rather than a wide enrober bolted to a narrow tunnel.

Coat strategy is the second factor. A single coat is one pass under the curtain. A double coat — a second curtain pass, sometimes with a base-coating or bottoming stage first — is used where the centre is porous, fragile, or fatty and needs sealing before the finish coat, or where a heavier shell is specified. Double coating changes the feed rate, the belt layout, and the cooling load, so it is decided at the design stage rather than added later. Cooling length is the third factor and it follows directly from throughput and coat mass. The faster the belt runs and the heavier the coat, the more cooling tunnel is needed to set the chocolate before the product is handled. We integrate the enrober with a cooling tunnel sized to the line, and our tunnel range — Model M-590, with a cooling capacity of 5,000-9,000 kcal/h and length configurable to the line output — is built to be matched to the enrober rather than treated as a separate purchase. Where an enrobing line sits inside a larger chocolate operation, it connects upstream to the same tempered-chocolate supply feeding our moulding lines and downstream to handling and packaging.

Every enrobing line we build is engineered to order at our Casablanca facility, in stainless steel, sized to your product and throughput. We do not publish a fixed enrobing model with a single capacity, because the honest answer for a coating line is that belt width, feed rate, coat strategy, and cooling length are set by the product in front of them. That is also why the specification is confirmed at quotation: we configure the line to your centre, your kilograms-per-hour or pieces-per-minute target, and your plant layout, then build it. Straight answer

What an enrobing line is not for

An enrobing line coats centres; it does not form them. It will not mould a solid tablet, a filled praline shell, or any product that has to be shaped from liquid chocolate — that is one-shot moulding work, and it is a different machine. If your product is defined by its inside, you need a centre first, whether moulded, extruded, baked, or bought in; the enrober only puts the chocolate on the outside. We will not sell you an enrober to do a moulding job. Does the enrobing line include a cooling tunnel?
Yes — we integrate the enrober with a cooling tunnel sized to the line.
