Chocolate Tempering Machines
Tempering is where chocolate earns its snap, gloss, and shelf life — the controlled crystallisation of cocoa butter into its stable form before the chocolate is deposited or coated. We build tempering into our one-shot moulding lines and supply standalone continuous temperers engineered to order at our Casablanca facility, each sized to the product and throughput you run. This is not an off-the-shelf catalogue box; it is a machine matched to your recipe, your kg/h, and the machines it sits between.

How we build to your product
Tempering is the controlled crystallisation of cocoa butter. Cocoa butter can set into several crystal forms, but only one of them gives finished chocolate the properties a producer wants: a firm snap, a bright gloss, even contraction so bars release cleanly from the mould, and stable shelf life without fat bloom. A temperer takes molten chocolate through a precise temperature cycle — cooling it to seed the correct crystals, then warming it slightly to melt out the unstable ones — so that what leaves the machine is fully in the stable form and ready to be deposited or coated. Get this wrong and the chocolate looks dull, sets soft, streaks white within days, or sticks in the mould. Get it right and every piece looks and behaves the same.
A producer needs a dedicated temperer once tempering by hand or by batch can no longer keep pace with the line. Small workshops can temper on a marble slab or in a table-top batch unit, and for low volumes that is enough. But as soon as chocolate has to flow continuously into a moulding line or an enrober at a steady rate and a steady temper, a continuous machine becomes the sensible unit — it holds the temperature curve automatically, hour after hour, and feeds the next machine without the operator chasing it. The trigger is rarely a single number; it is the point where consistency and throughput matter more than the flexibility of doing it by hand.
Sizing a temperer starts with throughput. The first question we ask is how many kilograms per hour of tempered chocolate the line needs, because that sets the capacity of the machine and how it couples to everything upstream and downstream. A temperer that feeds a small moulding station is a different machine from one feeding a high-output automatic line, and a unit built to keep an enrober's curtain supplied is different again.
Product type is the second factor. Dark, milk, and white chocolate crystallise at different temperatures and hold temper differently; compounds and fat-based coatings behave differently still. Recipes carry different fat contents, different viscosities, and different sensitivities, and the tempering cycle has to be set for the product actually being run — not a generic average. This is why we ask for the recipe or a product description before we quote: the machine is built around what you make.
The third factor is where the temperer sits in the line. A temperer feeding a moulding line has to deliver chocolate at the deposit temperature the depositor expects, in temper, at the flow the moulds demand. A temperer feeding an enrobing machine has to keep an enrobing curtain supplied at a steady temper across the working width. The upstream source matters too — whether the chocolate arrives from a stock tank, a ball mill, or a refining stage changes how the temperer is fed and controlled. We size the machine for its neighbours, not in isolation.
The last sizing decision is continuous versus batch. Continuous temperers run chocolate through a temperature-controlled circuit at a steady rate and suit lines that need a constant supply. Batch tempering suits smaller or more varied production where flexibility to switch products matters more than uninterrupted flow. Most industrial lines feeding moulding or enrobing want continuous tempering; the right answer depends on your production pattern, and we will tell you which fits when we see how you run.
On our automatic one-shot moulding line, temper is engineered into the line itself. The automatic Model M-560 carries mould temperature control, cooling-tunnel temperature control, and depositor temperature regulation, with a hot-water-tempered depositor — so the chocolate is held at the correct temperature through deposit and set. For a producer buying a complete moulding line, tempering is not a separate purchase to bolt on; it is part of how the line is built. Where a standalone continuous temperer is the right unit — feeding an enrober, feeding an existing moulding station, or sitting between a stock tank and the rest of a line — we build it to order at our Casablanca facility, sized to the product and throughput. A standalone continuous temperer is engineered to order, not pulled from a shelf, and that is the honest frame for this page. There is no fixed model code or published spec table here because the machine does not exist until it is sized to your job — which is a strength, not a hedge. To quote one accurately we need the product or recipe (dark, milk, white, or compound, and its fat content), your target throughput in kg/h, the machines upstream and downstream that the temperer must couple to, and your plant constraints — available floor space, power supply, and cooling water. With those in hand we can specify the machine, or tell you plainly if built-in temperature control on a moulding line is the better and more economical route for what you make.

A standalone continuous temperer is engineered to order, not an off-the-shelf unit — there is no fixed model or published spec because the machine is sized to your job. To quote one, we need the product or recipe (dark, milk, white, or compound, and its fat content), your target throughput in kg/h, the machines it must feed and be fed by, and your plant constraints — floor space, power, and cooling water. Tempering is a temperature and crystallisation process, not a flavour-development step: it will not develop or correct flavour, and it will not compensate for chocolate that arrives poorly refined or out of specification from upstream. If your route to production is a complete moulding line, temperature control is engineered into the automatic Model M-560 line itself, and we will tell you plainly when that is the better route than a separate temperer.
