Stage 1 — Fat melting
Solid fats and cocoa butter arrive in block or flake form and have to be brought to a liquid, temperature-stable state before anything else can happen. The fat melting tank M-1000 does this, melting, storing, and transferring 1,000 kg per 30 minutes.
It runs a heating system with thermal insulation to hold temperature without scorching, and it can be specified with steam heating, an integrated scale, and a flow meter for automatic, precise fat transfer downstream. Getting fat right here protects every stage that follows — an unstable fat phase shows up as poor flow at the depositor.
The tank is stainless steel throughout. It feeds the pre-mixing stage, and in larger plants it works alongside the storage tanks covered further down.
Stage 2 — Sugar milling
Crystalline sugar is too coarse to go straight into chocolate mass. The powder sugar mill M-500 turns it into powdered sugar at 500 kg/h, finishing to 50-60 micron, on 13 kW.
That fineness matters because the refining stage later has less work to do when the sugar entering the mass is already fine. Coarse sugar forces the ball mill to run longer to reach eating fineness, which cuts your effective throughput.
Milling sugar in-line, rather than buying pre-ground, gives you control over particle size and a steadier feed into pre-mixing. It is a small machine with a large influence on the quality of the finished bar.
Stage 3 — Pre-mixing
Before refining, the ingredients — melted fat, milled sugar, cocoa, milk powder where used — are brought together into a homogeneous mass. The pre-mixer M-1200 handles 1,000 kg per 15 minutes on 13 kW.
It carries a circulation pump for water heating and a 7-inch touchscreen with automatic programming, so a recipe runs the same way every batch. The build is stainless and quick-clean, which matters when you change between milk and dark runs.

Stage 4 — Ball-mill refining
Refining reduces the particle size of the mixed mass until it reaches eating fineness — the point where the chocolate no longer feels gritty on the palate. The ball mill M-150 refines a 500 kg batch per 2-3 hour cycle on 24 kW, in a single stainless vessel with all functions on the panel.
One point to be clear about: the ball mill refines, it does not conch. Refining is about particle size; conching is a separate, longer process for flavour development and moisture and acidity reduction. For many producers up to mid-industrial scale, ball-mill refining is enough. Where a product genuinely needs conching for flavour, that is a separate step, and we will tell you when yours does.

Stage 5 — Storage and transfer
Refined mass rarely goes straight to moulding. It is held warm and moving so it stays homogeneous and ready to draw on when the moulding line calls for it. The chocolate stock tank M-2000 stores 2,000 kg on 12 kW, with a serpentine heating system, thermal insulation, a circulation pump, and an integrated fan.
Storage is where a line gains flexibility. A buffer between refining and moulding lets the two stages run at their own best pace instead of forcing one to wait on the other.
Storage tanks are buildable from 50 kg to 100 tonnes, so the buffer is sized to the plant rather than the plant being forced to fit a fixed tank. Small workshop or full factory, the tank matches the line.
Stage 6 — One-shot moulding
This is where liquid chocolate becomes product. The automatic one-shot moulding line M-560 outputs 300-600 kg/h at 12-16 moulds/min, producing bars, tablets, and pralines with or without filling. Its sibling, the semi-automatic M-540, runs 200-500 kg/h at 15-18 moulds/min for smaller operations.
One-shot means shell and filling are deposited in a single action, so a filled praline is formed in one pass rather than in separate shell-and-fill steps. The M-560 uses Siemens servomotor dosing, a PLC touchscreen, Festo pneumatics, and FAG bearings, with a hot-water-tempered depositor. Chocolate moulds are supplied with the line.

Stage 7 — Cooling
Freshly deposited chocolate has to set under controlled conditions to get a clean release from the mould and a good gloss and snap. The cooling tunnel M-590 provides 5,000-9,000 kcal/h of cooling capacity over a 20-metre tunnel on 24 kW.
Controlled cooling is not just chilling. The rate and profile along the tunnel affect crystal structure, which is what gives a properly cooled bar its shine and clean break. The tunnel length is configurable to match the output of the moulding line ahead of it.
The M-590 sits directly after moulding in the sequence and is detailed on /machines/cooling-tunnels/. Tunnel and moulding line are sized together so cooling never becomes the bottleneck.
Stage 8 — Feeding and handling
At the tunnel exit, cooled product has to move toward sorting or packaging without being handled by hand. The feeding and alignment conveyor M-100 transports 1,000 pieces per minute, carrying bars, tablets, biscuits, cakes, and wafers from the tunnel exit onward.
Handling is the stage most often underspecified, and it is where a fast line can stall if the conveyor cannot keep pace with the moulding output. Matching the M-100 to the line ahead of it keeps product flowing to packaging.
