From permits to production: the planning overview
Before any machine arrives, a chocolate factory needs a place to run and the paperwork to run it. The exact requirements are set by Ivorian authorities, so treat the steps below as a planning frame rather than a checklist of specifics.
Start with the premises. A chocolate line needs floor space for the equipment, clearance around each machine for operators and cleaning, and a layout that lets product flow in one direction from melting through moulding to packing. Storage and stock tanks are heavy, so floor loading matters. Our automatic moulding line alone runs 13 metres long, and the cooling tunnel adds a 20-metre run, so measure your building against the line before you commit.
Utilities come next. Chocolate equipment draws three-phase power, needs potable water for jacket heating and cleaning, and benefits from a stable ambient temperature so tempered product sets predictably. Compressed air feeds the pneumatics on the moulding line. Plan these supplies early, because retrofitting a building is slower than specifying them from the start.
Finally, food-safety registration. Producing food for sale means registering the operation with the relevant Ivorian food authority and building your premises and process to meet hygiene requirements. Our machines are built in stainless steel with hygienic, quick-clean construction to support that, but the registration itself is yours to obtain. The chocolate line, machine by machine
A chocolate factory is a sequence of machines, each handling one step. Understanding the chain helps you decide what to buy first and what to add later. The full sequence is laid out on our /solutions/chocolate-processing-lines/ page; here is what each station does.
Fat melting comes first. The M-1000 fat melting tank melts, stores, and transfers solid fats at 1,000 kg per 30 minutes, with a heating system and thermal insulation to hold temperature. This is where cocoa butter and other fats enter the process as a controlled liquid.
Sugar milling runs in parallel. The M-500 powder sugar mill turns crystalline sugar into powder at 500 kg/h, finishing to 50–60 micron so the sugar refines cleanly into the chocolate mass rather than leaving grit.
Pre-mixing brings the recipe together. The M-1200 pre-mixer produces a homogeneous batch of 1,000 kg per 15 minutes, with a 7-inch touchscreen for programming and a circulation pump for water heating.
Refining is the heart of the line. Our M-150 ball mill takes a 500 kg batch and refines it to eating fineness over a 2–3 hour cycle at 24 kW. It refines the mass but does not conch, so where flavour development through conching is essential to your product, we will tell you and scope that step separately. Storage holds refined chocolate ready to use. The M-2000 stock tank stores and transfers 2,000 kg with a serpentine heating system and circulation pump. We build storage tanks from 50 kg to 100 tonnes, so the tank scales to your output.
Moulding is where chocolate becomes product. The M-560 automatic one-shot moulding line runs 300–600 kg/h at 12–16 moulds per minute, with Siemens servomotor dosing, a PLC touchscreen, Festo pneumatics, and FAG bearings; it produces bars, tablets, and pralines with or without filling. Cooling and handling finish the run. The M-590 cooling tunnel sets moulded product with 5,000–9,000 kcal/h over a 20-metre tunnel, and the M-100 feeding conveyor moves finished pieces toward packing at up to 1,000 pcs/min.
Staging capacity: start where you can, expand as you grow
You do not have to buy the whole line at once. The chocolate chain is modular, which lets you match your investment to your market and add capacity as demand builds.
A common starting point is refining, storage, and moulding: enough to take a chocolate mass, hold it, and produce finished bars or pralines. The semi-automatic M-540 moulding line at 200–500 kg/h suits a first factory, and stepping up to the automatic M-560 at 300–600 kg/h is a natural expansion when volume justifies it.
Because tanks build from 50 kg to 100 tonnes and the cooling tunnel length is configurable to line output, the line grows with you rather than boxing you in. You can add the M-1000 melting tank and M-500 sugar mill to bring more of the process in-house, or extend storage as batch sizes rise.
